Garlic Butter Shrimp Pasta
Ingredients
- 12 ounces pasta (e.g., linguine, fettuccine, or spaghetti)
- 1 pound large shrimp, peeled and deveined
- 3 tablespoons unsalted butter
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 teaspoon crushed red pepper flakes (optional, for heat)
- 1/4 cup dry white wine (or chicken broth)
- 1 lemon, juiced
- 1/4 cup grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped (plus more for garnish)
- Salt and pepper to taste
Directions
Cook the Pasta:
- Cook the pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
Cook the Shrimp:
- In a large skillet, heat olive oil and 1 tablespoon of butter over medium-high heat.
- Add the shrimp to the skillet in a single layer. Cook for 2-3 minutes per side, or until the shrimp are pink and opaque. Remove shrimp from the skillet and set aside.
Prepare the Garlic Butter Sauce:
- In the same skillet, add the remaining 2 tablespoons of butter.
- Add the minced garlic and crushed red pepper flakes (if using). Cook for 1-2 minutes, until the garlic is fragrant but not burnt.
- Pour in the white wine (or chicken broth) and lemon juice. Simmer for 2-3 minutes, allowing the sauce to reduce slightly.
Combine Pasta and Shrimp:
- Return the cooked shrimp to the skillet and toss to coat in the sauce.
- Add the cooked pasta to the skillet and toss everything together, adding a bit of the reserved pasta water if needed to loosen the sauce.
- Stir in the grated Parmesan cheese and fresh parsley. Season with salt and pepper to taste.
Serve:
- Divide the pasta among serving plates. Garnish with additional fresh parsley and a sprinkle of Parmesan cheese if desired.
