Pecan Pie Cobbler
Ingredients
For the Cobbler Base:
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 1 cup milk
- 1 tablespoon baking powder
- 1/4 teaspoon salt
For the Pecan Pie Filling:
- 1 cup light corn syrup
- 1 cup packed brown sugar
- 1/2 cup unsalted butter, melted
- 4 large eggs
- 2 teaspoons vanilla extract
- 2 cups chopped pecans
Directions
Preheat the Oven:
- Preheat your oven to 350°F (175°C).
- Grease a 9×13-inch baking dish.
Prepare the Cobbler Base:
- In a large bowl, whisk together the flour, sugar, melted butter, milk, baking powder, and salt until smooth.
- Pour the batter into the prepared baking dish.
Prepare the Pecan Pie Filling:
- In a separate bowl, whisk together the corn syrup, brown sugar, melted butter, eggs, and vanilla extract until well combined.
- Stir in the chopped pecans.
Assemble the Cobbler:
- Carefully pour the pecan pie filling over the batter in the baking dish. Do not stir; the filling will sink and create a topping as it bakes.
Bake:
- Bake in the preheated oven for 50-60 minutes, or until the top is golden brown and the cobbler is set. A toothpick inserted into the center should come out clean.
Cool and Serve:
- Allow the cobbler to cool slightly before serving.
Enjoy!
