Pecan Pie Cobbler

Ingredients

For the Cobbler Base:

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt

For the Pecan Pie Filling:

  • 1 cup light corn syrup
  • 1 cup packed brown sugar
  • 1/2 cup unsalted butter, melted
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups chopped pecans

Directions

Preheat the Oven:

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×13-inch baking dish.

Prepare the Cobbler Base:

  1. In a large bowl, whisk together the flour, sugar, melted butter, milk, baking powder, and salt until smooth.
  2. Pour the batter into the prepared baking dish.

Prepare the Pecan Pie Filling:

  1. In a separate bowl, whisk together the corn syrup, brown sugar, melted butter, eggs, and vanilla extract until well combined.
  2. Stir in the chopped pecans.

Assemble the Cobbler:

Bake:

  1. Bake in the preheated oven for 50-60 minutes, or until the top is golden brown and the cobbler is set. A toothpick inserted into the center should come out clean.

  1. Allow the cobbler to cool slightly before serving.
