Candied Roasted Sweet Potatoes

Ingredients

  • 4 large sweet potatoes, peeled and cut into 1-inch cubes
  • 1/4 cup unsalted butter, melted
  • 1/4 cup brown sugar
  • 1/4 cup pure maple syrup (or honey)
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped pecans (optional, for added crunch)
  • 1/4 cup mini marshmallows (optional, for topping)

Directions

Preheat the Oven:

  1. Preheat your oven to 400°F (200°C).

Prepare the Sweet Potatoes:

  1. Place the sweet potato cubes in a large bowl.

Make the Candy Coating:

  1. In a separate bowl, combine the melted butter, brown sugar, maple syrup (or honey), ground cinnamon, ground nutmeg, salt, and black pepper. Stir until the sugar is dissolved and the mixture is smooth.

Coat the Sweet Potatoes:

  1. Pour the butter and sugar mixture over the sweet potato cubes. Toss to coat evenly.

Roast:

  1. Spread the coated sweet potatoes in a single layer on a baking sheet.
  2. Roast in the preheated oven for 25-30 minutes, or until the sweet potatoes are tender and caramelized. Stir once or twice during roasting to ensure even cooking.

Add Pecans and Marshmallows (Optional):

  1. If using, sprinkle the chopped pecans and mini marshmallows over the sweet potatoes during the last 5 minutes of roasting.

Serve:

  1. Remove from the oven and let cool slightly before serving.
