Southern Deep Fried Lobster
Ingredients
- 4 lobster tails (fresh or thawed if frozen)
- 1 cup buttermilk
- 1 cup all-purpose flour
- 1 cup cornmeal
- 2 teaspoons paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- 1/2 teaspoon cayenne pepper (optional, for heat)
- 1 teaspoon salt
- 1 teaspoon black pepper
- Vegetable oil (for frying)
Directions
Prepare the Lobster Tails:
- Using kitchen scissors, cut the top shell of each lobster tail lengthwise, from the base to the tip, and gently lift the meat out of the shell, leaving it attached at the base. This makes it easier to coat and cook.
Marinate in Buttermilk:
- Place the lobster tails in a bowl and cover with buttermilk. Marinate in the refrigerator for at least 30 minutes to an hour. This tenderizes the lobster and adds flavor.
Prepare the Coating:
- In a large shallow dish, combine flour, cornmeal, paprika, garlic powder, onion powder, dried thyme, cayenne pepper (if using), salt, and black pepper.
Heat the Oil:
- In a large, deep skillet or pot, heat about 2 inches of vegetable oil to 350°F (175°C). Use a deep-fry thermometer to ensure the oil is at the right temperature.
Coat the Lobster Tails:
- Remove the lobster tails from the buttermilk, allowing any excess to drip off.
- Dredge each lobster tail in the flour mixture, coating it thoroughly. Press the coating onto the lobster meat to ensure it sticks.
Fry the Lobster Tails:
- Carefully lower the coated lobster tails into the hot oil, a few at a time, without overcrowding the pan. Fry for 3-4 minutes, or until golden brown and cooked through. The lobster meat should be opaque and have an internal temperature of 145°F (63°C).
- Use a slotted spoon to remove the lobster tails from the oil and place them on a paper towel-lined plate to drain excess oil.
