Ingredients
- 1 (3-4 pound) beef roast (such as chuck or round)
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 tablespoon dried rosemary
- 1 tablespoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 4 large potatoes, peeled and cut into chunks
- 4 large carrots, peeled and cut into chunks
- 1 large onion, cut into wedges
- 1 cup beef broth (or water)
- 1 tablespoon all-purpose flour (optional, for thickening gravy)
Directions
Preheat the Oven:
- Preheat your oven to 350°F (175°C).
Season the Roast:
- Rub the beef roast with olive oil.
- In a small bowl, mix together the minced garlic, dried rosemary, dried thyme, dried oregano, salt, and pepper.
- Rub the seasoning mixture all over the roast.
Prepare the Vegetables:
- Place the cut potatoes, carrots, and onion in the bottom of a large roasting pan or baking dish.
- Drizzle with a little olive oil and season with salt and pepper. Toss to coat.
Roast the Meat and Vegetables:
- Place the seasoned beef roast on top of the vegetables in the roasting pan.
- Pour the beef broth (or water) around the roast and vegetables.
- Cover the roasting pan with aluminum foil.
Bake:
- Roast in the preheated oven for 2 to 2.5 hours, or until the beef is tender and reaches an internal temperature of 145°F (63°C) for medium rare, 160°F (71°C) for medium, or 170°F (77°C) for well done.
- Remove the foil during the last 30 minutes of roasting to allow the roast to brown and the vegetables to caramelize.
Optional Gravy:
- If you like gravy, remove the roast and vegetables from the pan and transfer to a serving platter.
- Place the roasting pan on the stove over medium heat. Stir in 1 tablespoon of all-purpose flour and cook for 1-2 minutes.
- Gradually whisk in additional beef broth or water, cooking until the gravy thickens to your liking.
Serve:
- Slice the roast and serve with the roasted potatoes, carrots, and onions. Pour the gravy over the top if desired.
