Roast with Potatoes, Carrots, and Onions

Ingredients

  • 1 (3-4 pound) beef roast (such as chuck or round)
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon dried rosemary
  • 1 tablespoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 4 large potatoes, peeled and cut into chunks
  • 4 large carrots, peeled and cut into chunks
  • 1 large onion, cut into wedges
  • 1 cup beef broth (or water)
  • 1 tablespoon all-purpose flour (optional, for thickening gravy)

Directions

Preheat the Oven:

  1. Preheat your oven to 350°F (175°C).

Season the Roast:

  1. Rub the beef roast with olive oil.
  2. In a small bowl, mix together the minced garlic, dried rosemary, dried thyme, dried oregano, salt, and pepper.

Serve:

  1. Slice the roast and serve with the roasted potatoes, carrots, and onions. Pour the gravy over the top if desired.
