  • 1/2 cup vegetable oil
  • 3 large eggs
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

For the Pineapple Glaze:

  • 1/4 cup pineapple juice
  • 1/2 cup granulated sugar
  • 1 tablespoon cornstarch

Optional for Garnish:

  • Shredded coconut
  • Maraschino cherries

Directions

Preheat the Oven:

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour a 9×13-inch baking dish or two 8-inch round cake pans.

Prepare the Cake Batter:

  1. In a large mixing bowl, whisk together the pineapple juice, sugar, and vegetable oil until well combined.
  2. Add the eggs one at a time, beating well after each addition to incorporate fully.
  3. In a separate bowl, sift together the flour, baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  5. Stir in the vanilla extract to enhance the flavor.

Bake the Cake:

  1. Pour the batter into the prepared baking dish or cake pans, spreading it evenly.
  2. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown.

Prepare the Pineapple Glaze:

  1. In a small saucepan, combine the pineapple juice, sugar, and cornstarch.
  2. Cook over medium heat, stirring constantly, until the mixture comes to a boil and thickens to a syrupy consistency.
  3. Remove from heat and let it cool slightly before using.

Glaze the Cake:

  1. Once the cake is baked and slightly cooled, poke small holes in the top of the cake using a toothpick or fork.
  2. Pour the pineapple glaze evenly over the cake, allowing it to seep into the holes and soak into the cake.

Garnish (Optional):

  1. For an extra touch of tropical flair, sprinkle shredded coconut over the glazed cake and place maraschino cherries on top.

Serve:

  1. Allow the cake to cool completely before slicing and serving.
  2. Enjoy this sweet and tropical Pineapple Juice Cake as a delightful dessert for any occasion!

Notes

  • For a richer flavor, you can use coconut milk in place of some of the pineapple juice.
  • Ensure the cake is completely cooled before adding the glaze to prevent it from melting or becoming runny.
