Peach Cobbler Cheesecake Cones

Ingredients

For the Cheesecake Filling:

  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1/2 cup sour cream
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 tablespoon all-purpose flour

For the Peach Topping:

  • 2 cups fresh or canned peaches, peeled and sliced (if using canned, drain well)
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 1 tablespoon butter

For the Cone Assembly:

  • 12 sugar cones (or waffle cones)
  • 1/4 cup crushed graham crackers (for garnish)

Directions

Prepare the Peach Topping:

  1. In a medium saucepan, combine the peaches, granulated sugar, cornstarch, cinnamon, nutmeg, lemon juice, and butter.
  2. Cook over medium heat, stirring occasionally, until the mixture comes to a boil and thickens, about 5-7 minutes.
  3. Remove from heat and let cool slightly.

Prepare the Cheesecake Filling:

  1. In a mixing bowl, beat the softened cream cheese and granulated sugar until smooth and creamy.
  2. Add the sour cream, heavy cream, vanilla extract, and flour. Beat until well combined and smooth.
  3. Chill the cheesecake filling in the refrigerator for about 30 minutes to firm up slightly.

Assemble the Cones:

  1. Spoon or pipe the cheesecake filling into each sugar cone, filling it about 3/4 full.
  2. Top each cone with the peach topping, allowing some of the peach mixture to cascade down the sides of the cone.
  3. Sprinkle the crushed graham crackers over the top for a touch of cobbler-like crunch.

Chill and Serve:

  1. Place the assembled cones in a cup or stand to keep them upright and refrigerate for about 30 minutes before serving.
