Meatloaf in a Muffin Pan: Quick, Delicious, and Perfectly Portioned

Ingredients

  • 1 pound ground turkey or ground beef
  • 1/3 cup breadcrumbs or oatmeal (either works, but oatmeal adds a nice texture)
  • 1/3 cup Parmesan cheese
  • 1 egg
  • 1 (8-ounce) can tomato sauce (or substitute with ketchup; personal preference is ketchup for its sweetness)
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste
  • Several shakes of Worcestershire sauce (about a teaspoon)
  • A couple of handfuls of your favorite veggies (onions, mushrooms, zucchini, broccoli, carrots, spinach, lentils, etc.)

Instructions

Step 1: Preheat and Prepare

  1. Preheat your oven to 350 degrees Fahrenheit.
  2. In a large bowl, combine all the ingredients, but reserve about ¼ of the tomato sauce or ketchup for topping the meatloaf muffins.

Step 2: Form the Meatloaf Muffins

  1. Press the meat mixture into the muffin cups, filling each cup evenly. You should be able to make eight to ten meatloaf muffins from this recipe.
  2. Top each meatloaf muffin with a dollop of the reserved tomato sauce or ketchup for extra flavor.

Step 3: Bake and Serve

  1. Bake in the preheated oven for 30-35 minutes, or until the meat is fully cooked and the tops are slightly caramelized.
  2. Serve two meatloaf muffins per person and enjoy a quick, hearty meal that’s ready in no time!
