Garlic Butter Steak and Potatoes Skillet
Ingredients
- 1 pound sirloin steak (or ribeye, flank, or your preferred cut)
- 1 pound baby potatoes, halved (or quartered if large)
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons fresh parsley, chopped (for garnish)
- 1 lemon, cut into wedges (for serving, optional)
Directions
Prepare the Steak:
- Season the steak with salt, pepper, paprika, dried rosemary, and dried thyme on both sides.
Cook the Potatoes:
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Add the halved baby potatoes and cook, stirring occasionally, for 10-15 minutes or until they start to become tender and golden brown. Remove the potatoes from the skillet and set aside.
Cook the Steak:
- In the same skillet, add the remaining 1 tablespoon of olive oil over medium-high heat.
- Add the steak and cook for 4-6 minutes per side, or until it reaches your desired level of doneness. For medium-rare, aim for an internal temperature of 135°F (57°C). Remove the steak from the skillet and let it rest on a plate for 5 minutes before slicing.
Prepare the Garlic Butter:
- In the same skillet, reduce the heat to medium and add the butter.
- Once the butter is melted, add the minced garlic and cook for 1-2 minutes, until fragrant. Be careful not to burn the garlic.
Combine and Finish:
- Return the cooked potatoes to the skillet with the garlic butter. Stir to coat the potatoes in the garlic butter.
- Slice the rested steak and arrange it on top of the potatoes.
Garnish and Serve:
- Sprinkle chopped fresh parsley over the top.
- Serve with lemon wedges on the side if desired.
