Ingredients
For the Beef Marinade:
- 600g beef
cut into medium-sized chunks
- ½ tsp chili powder
- ½ tsp turmeric powder
- ½ tsp garam masala
- 1 tbsp ginger
finely grated or paste
- 1 tsp cooking oil
- 1 tsp salt
For the Curry Base:
- 2 onions
shallot or brown, finely chopped
- 2 large vine-ripened tomatoes
chopped
- 2 tbsp garlic
finely grated or paste
- Handful of coriander
roughly chopped
- 4-5 tbsp cooking oil
ghee, or unsalted butter
- 1 tsp salt
or to taste
- 2 cups warm water
For the Spices:
- 1 tsp chili powder
- 1 tsp turmeric powder
- 1 tsp garam masala
- ½ tsp coriander powder
- 1 cinnamon stick
- 3-4 bay leaves
- 1 tsp cumin seeds
Instructions
Marinate the beef with the specified ingredients and set aside for 15 minutes.
Heat oil and toast the cumin, cinnamon, and bay leaves. Add onions and garlic, cooking until golden.
Add tomatoes and cook until softened. Add the marinated beef and spices. Stir well.
Add warm water, cover, and simmer for 1 hour, stirring occasionally. Adjust water if needed.
Garnish with fresh coriander and serve with rice or naan.
Notes
- Marinate beef for extra flavor.
- Adjust chili powder for a milder or spicier curry.
