Homemade Beef Curry

Tender chunks of beef in a spiced, tomato-based gravy. Perfect with rice, naan, or chapati.

Ingredients
  

  • For the Beef Marinade:
  • - 600g beef cut into medium-sized chunks
  • - ½ tsp chili powder
  • - ½ tsp turmeric powder
  • - ½ tsp garam masala
  • - 1 tbsp ginger finely grated or paste
  • - 1 tsp cooking oil
  • - 1 tsp salt
  • For the Curry Base:
  • - 2 onions shallot or brown, finely chopped
  • - 2 large vine-ripened tomatoes chopped
  • - 2 tbsp garlic finely grated or paste
  • - Handful of coriander roughly chopped
  • - 4-5 tbsp cooking oil ghee, or unsalted butter
  • - 1 tsp salt or to taste
  • - 2 cups warm water
  • For the Spices:
  • - 1 tsp chili powder
  • - 1 tsp turmeric powder
  • - 1 tsp garam masala
  • - ½ tsp coriander powder
  • - 1 cinnamon stick
  • - 3-4 bay leaves
  • - 1 tsp cumin seeds

Instructions
 

  • Marinate the beef with the specified ingredients and set aside for 15 minutes.
  • Heat oil and toast the cumin, cinnamon, and bay leaves. Add onions and garlic, cooking until golden.
  • Add tomatoes and cook until softened. Add the marinated beef and spices. Stir well.
  • Add warm water, cover, and simmer for 1 hour, stirring occasionally. Adjust water if needed.
  • Garnish with fresh coriander and serve with rice or naan.

Notes

- Marinate beef for extra flavor.
- Adjust chili powder for a milder or spicier curry.
