Step-by-Step Instructions
1. Preheat & Prep
- Preheat the oven to 400°F (200°C).
- Grease a deep baking dish with a little butter.
2. Prepare the Cauliflower
- Rinse the whole cauliflower thoroughly and pat dry.
- Place the cauliflower stem-side down in the prepared baking dish.
3. Bake with Broth & Herbs
- Pour the broth, cloves, bay leaves, and Italian seasoning around the cauliflower.
- Cover the dish with foil and bake for 15-20 minutes until slightly tender.
4. Reduce the Sauce
- Remove the cauliflower and let it rest for 10 minutes.
- Strain the broth to remove bay leaves and cloves.
- Simmer the broth on medium heat until reduced to about 1 cup (5-8 minutes).
- Reduce the heat to low, then whisk in the butter cubes one at a time to create a rich sauce.
5. Roast to Perfection
- Pour the butter sauce over the cauliflower and bake for another 10 minutes at 400°F.
- Baste the cauliflower with the sauce 4-5 times during baking for extra flavor.
- Once golden brown and slightly crispy, remove from the oven.

- Sprinkle with freshly ground black pepper.
