Step-by-Step Instructions

1. Preheat & Prep

  1. Preheat the oven to 400°F (200°C).
  2. Grease a deep baking dish with a little butter.

2. Prepare the Cauliflower

  1. Rinse the whole cauliflower thoroughly and pat dry.
  2. Place the cauliflower stem-side down in the prepared baking dish.

3. Bake with Broth & Herbs

  1. Pour the broth, cloves, bay leaves, and Italian seasoning around the cauliflower.
  2. Cover the dish with foil and bake for 15-20 minutes until slightly tender.

4. Reduce the Sauce

  1. Remove the cauliflower and let it rest for 10 minutes.
  2. Strain the broth to remove bay leaves and cloves.
  3. Simmer the broth on medium heat until reduced to about 1 cup (5-8 minutes).
  4. Reduce the heat to low, then whisk in the butter cubes one at a time to create a rich sauce.

5. Roast to Perfection

  1. Pour the butter sauce over the cauliflower and bake for another 10 minutes at 400°F.
  2. Baste the cauliflower with the sauce 4-5 times during baking for extra flavor.
  3. Once golden brown and slightly crispy, remove from the oven.

6. Serve & Enjoy!

  1. Sprinkle with freshly ground black pepper.
  2. Slice and serve with the remaining butter sauce from the pan.
