Pecan Pie Bars

Ingredients

For the Crust:

  • 1 3/4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cut into small pieces

For the Pecan Filling:

  • 1 cup light corn syrup
  • 1 cup packed brown sugar
  • 1/2 cup unsalted butter, melted
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups chopped pecans

Directions

Prepare the Crust:

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine the flour, granulated sugar, and salt.
  3. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  4. Press the mixture evenly into the bottom of a greased 9×13-inch baking dish to form the crust.

Bake the Crust:

  1. Bake the crust in the preheated oven for 15 minutes, or until it starts to turn golden brown. Remove from the oven and set aside.

Prepare the Pecan Filling:

  1. In a large bowl, whisk together the corn syrup, brown sugar, melted butter, eggs, and vanilla extract until well combined.
  2. Stir in the chopped pecans.

Assemble the Bars:

  1. Pour the pecan filling over the pre-baked crust, spreading it evenly.

Bake the Bars:

  1. Return the baking dish to the oven and bake for an additional 30-35 minutes, or until the filling is set and slightly puffed.

Cool and Cut:

  1. Allow the bars to cool completely in the baking dish before cutting into squares.
