3️⃣ Heat the Cream & Remaining Sugar

  • While the first sugar melts, in a large saucepan, combine 4 cups sugar and heavy cream.
  • Simmer on low heat, stirring occasionally.

4️⃣ Merge the Sugars

  • Slowly pour the melted sugar into the cream mixture, stirring constantly.

5️⃣ Cook to Softball Stage

  • Increase heat to medium and cook until the mixture reaches 244°F (softball stage).
  • Use a candy thermometer for accuracy!

6️⃣ Add the Final Ingredients

  • Remove from heat and stir in baking soda, then add butter and vanilla extract.
  • Stir until butter melts and mixture is smooth.

7️⃣ Let It Rest & Add Nuts

  • Allow the candy to rest for 20 minutes.
  • Stir in chopped pecans or walnuts until the glossy sheen disappears.

8️⃣ Pour & Cool

  • Transfer the mixture into the prepared baking dish and let cool for 1-2 hours.
