Step-by-Step Instructions
1. Brown the Beef for Maximum Flavor
- Heat olive oil in a large pot over high heat.
- Pat the beef cubes dry with paper towels, season with salt and pepper, and brown in batches. Set aside.
2. Build the Soup Base
- If needed, add more oil to the pot and sauté onion & garlic for 2 minutes.
- Add carrots and celery; cook until onions turn translucent.
- Stir in flour and mix well. Slowly pour in beef broth while stirring continuously.
3. Simmer the Soup
- Add wine (or Guinness), water, tomato paste, bay leaves, and thyme.
- Return browned beef to the pot. Cover and let simmer on medium-low heat for 1 hour 15 minutes, or until the beef is tender.
4. Add the Final Ingredients
- Stir in potatoes & peas and continue simmering for another 20 minutes without the lid.
- Optional: If using, sauté mushrooms in butter until browned, then add to the soup in the last 5 minutes.
5. Serve & Enjoy!
- Once beef and potatoes are tender, adjust seasoning and serve hot with crusty bread.
