Step-by-Step Instructions

1. Brown the Beef for Maximum Flavor

  1. Heat olive oil in a large pot over high heat.
  2. Pat the beef cubes dry with paper towels, season with salt and pepper, and brown in batches. Set aside.

2. Build the Soup Base

  1. If needed, add more oil to the pot and sauté onion & garlic for 2 minutes.
  2. Add carrots and celery; cook until onions turn translucent.
  3. Stir in flour and mix well. Slowly pour in beef broth while stirring continuously.

3. Simmer the Soup

  1. Add wine (or Guinness), water, tomato paste, bay leaves, and thyme.
  2. Return browned beef to the pot. Cover and let simmer on medium-low heat for 1 hour 15 minutes, or until the beef is tender.

4. Add the Final Ingredients

  1. Stir in potatoes & peas and continue simmering for another 20 minutes without the lid.
  2. Optional: If using, sauté mushrooms in butter until browned, then add to the soup in the last 5 minutes.

5. Serve & Enjoy!

  • Once beef and potatoes are tender, adjust seasoning and serve hot with crusty bread.
